The usual answer
Most worn marble, granite, limestone, travertine, and terrazzo in GTA homes and buildings can be restored where it is. Replacement costs far more per square foot, plus tear-out, disposal, and time without the room. Check your stone below, or try the estimator, before you budget for new stone.
Cost
What each path usually costs.
Rough GTA figures: restoring costs $2.50 to $20 per sq ft ($750 minimum). New marble costs $110 to $220 per sq ft, plus tear-out, often $1,200 to $2,800 for a home counter and $3,500 to $12,000 for commercial. A firm quote needs photos and a site visit.

How long you live with the mess.
Restoring a home counter usually takes a day, and a floor 1 to 3 days. Commercial lobbies are done overnight in stages. Replacement usually takes 2 to 4 weeks for templating, fabrication, and installation, and longer if the space must stay open for guests or tenants.

Marble
Almost always restore. Etched, stained, or chipped marble can usually be refinished in place.
Restore or replace marble?Granite
Usually restore. Granite is hard-wearing, and most dullness, chips, and stains can be fixed.
Restore or replace granite?Limestone
Restore in most cases. Soft limestone smooths out and reseals well.
Restore or replace limestone?Travertine
Restore in most cases. The holes are filled, and the worn surface is smoothed and sealed.
Restore or replace travertine?Terrazzo
Almost always restore. Terrazzo grinds back to look new, so replacing it rarely makes sense.
